Fried Rice

The kids have been home sick this week, and with not knowing what our days will entail, I decided I needed to make a couple of meals that I could put in the fridge, so I don't have to worry about cooking for the next couple of days.  

This is one of the most basic meals, but I thought I'd share it with you guys in case it's not on your dinner menu's.  If it's not, it should be.  It's a meal, I can eat for breakfast, lunch or dinner.


4 cups of brown rice
1 sweet onion
1 green pepper
1 package of bacon
12 eggs


Bring 8 cups of water to a boil, and add 4 cups of rice.  
Cook on low for about 45 minutes with the lid on.
Drain the water, and rinse the rice in cold water, then set aside.
Scramble the eggs and cook them in a pan.
Then cook the bacon, diced onion and pepper in a pan.
Add the scrambled eggs to the bacon mixture and then add in the rice.  
Mix together and drizzle a little soy sauce over the the whole thing.


When dishing up, we like to add a bit more soy sauce and sprinkle our rice with shredded cheese.

We have 5 of us to feed and all of my family likes this dish, so I usually make a big batch.  If you don't want as much, this would be easy to scale back on.

    1. Yes, so simple and you could even add diced up polish sausage instead of bacon, which is good too. :)

  3. I am not a big fried rice fan...but love me some plain ol white rice!!! :) We have bronchitis at our house this week -- hope your kiddos are feeling better!!
